Definition
A distributed systems guarantee that data will become consistent across all nodes... eventually. It's the technical way of saying 'trust me bro, it'll sync up at some point' while hoping nobody notices the delay.

Our system uses eventual consistency, so don't panic if user counts look different across regions for a few seconds.
Origin
Formalized in distributed systems theory in the 1990s-2000s, particularly in Werner Vogels' work at Amazon
Fun Fact
Amazon's shopping cart is eventually consistent, which is why you occasionally see items flicker in and out—they decided showing you slightly stale data is better than waiting for perfect consistency.
