Definition
In cooking, the sweet spot between 'still mooing' and 'shoe leather'—when your steak has a warm red center with a nice crust. Also the catch-all term for 'we need to specify how done you want this protein, but we're not sure you'll know the difference anyway.'
Example Usage
I'll have my steak medium, which means it'll probably arrive medium-rare because that's what the kitchen thinks is correct.
